Ingredients for 4
- 200g broken Thai rice (or 1 cup)
- 1.5l stock (or 10 cups water)
- 2 thumbs of ginger, cut into matchsticks
- 1tbsp light soy
- 2 spring onions
- chilli oil
- 500g minced pork (or 1 cup)
- half a thumb ginger, grated
- 1 garlic clove, crushed
- 2 spring onions
- optional fried onions to garnish
Method
- Rinse rice in large pot
- Add 6 cups of water/stock, and bring to boil
- Once boiling, turn down to medium low
- Whilst rice booking, add oil, finely chopped garlic & ginger to a pan and cook through
- Add the minced pork
- When cooked, add 1 tbsp fish sauce, 1 tbsp light soy, stir, and remove from heat
